When you have at least 3 villagers that recently slept they will periodically check for an iron golem and spawn one if there isn't already one. You can accelerate this by putting the villagers into a panicked state. That is achieved by having eye contact with a zombie, drowned, husk or a pillager. Edit: They panick by more mobs.
